Chocolate Brownie with a healthier twist

Usually brownies are full of butter, sugar and flour. What I love about this recipe, is that it adds some extra nourishment with the added veg, wholegrain, fibre and heart healthy fat!

12 Servings; 25 minutes

The Ingredients

  • 400g tin black beans (drained and rinsed well)

  • 2 tbsp cocoa powder

  • 1/2 cup rolled oats

  • 1/4 tsp salt

  • 1/3 cup pure maple syrup

  • 50ml olive oil

  • 2 tsp pure vanilla extract

  • 1/2 tsp baking powder

  • 1/2 cup dark choc chips

The Directions

1. Preheat oven to 180°C

2. Combine all ingredients except choc chips in a food processor or blender and blend until completely smooth.

3. Stir in the choc chips, then pour into a lined 9x5" baking tray.

4. Cook the brownie for 15 minutes, then remove from oven and allow to cool for 10 min before cutting. If they are too soft, place in the fridge overnight to firm up.

And lastly - enjoy it mindfully! Take note of the smell, the flavour and the texture of it. Slow down as you chew it, savouring each mouthful. Enjoy it as part of a balanced diet full of filling meals throughout the day!
